2 cups Bakels Gluten Free Flour
450g mixed fruit
1 tsp mixed spice
1 1/2 tsp baking soda
425g crushed pineapple
1 cup sugar
2 eggs (beaten)
1 1/2 Gluten Free baking powder
Make Up Instructions
Put sugar, pineapple, mixed fruit, baking soda, mixed spice and butter in a saucepan and bring to the boil for 3 minutes. Remove from the heat and when cooled add the sifted Bakels Gluten Free Flour and baking powder to beaten eggs and combine all together.
Place mixture in a greased, well lined 20cm tin and bake in a moderate oven at 160?C for about 11/2 hours. Reduce heat to 140?C and bake for a further 20 minutes.
